Keeping & Storing


A paper bag is the best way to store a moist loaf of fresh bread; it allows enough airflow to prevent mold and keeps the bread from drying out too quickly. If you wish to store for the long term, whole loaves wrapped in plastic wrap and sealed in a bag will last for many months. Once defrosted, the loaves may be used as is or sprinkled with water and re-baked at 400°F for 12 minutes to achieve a fresh, out-of-the-oven quality.

To keep filled pastries fresh, store them in an airtight container in the refrigerator. For best results, remove them about 30 minutes before serving. For items like croissants, it's best to freeze them. Wrap each one individually in plastic wrap to prevent freezer burn, then place them in a sealed plastic bag or airtight container. When ready to serve, reheat in the oven to restore their flakiness and warmth.

Our grains are sourced from a variety of farms, including Chimacum Valley Grainery, Azure Farms Mill, and Central Milling.

It is important to us that the dairy we use comes from grass-fed pasture-raised cows. We source our milk from local small dairies, such as TUNaWERTH Creamery.

We also grow a variety of fruits, herbs, and vegetables on our homestead for use in our products, ensuring the absolute best flavor.
